Fuji Cutlery Co., Ltd. is a Japanese manufacturer from Tsubame Prefecture, Niigata City. Fuji Cutlery is a subsidiary company of the famous brand and Japanese knife manufacturer Tojiro Co., Ltd. Since the Fuji Cutlery manufacturer owns factories in both China and Japan, this allows the manufacturer to diversify the production process, reducing production costs for the final product. Therefore, the country of manufacture may differ for the Fuji Cutlery series of knives. For example, the REIGETSU series is made in China, but inspected, sharpened and packaged in Japan. All finishing work and inspections occur in the Sanjo City factory of Tojiro. The initial grinding and heat treatment are done in China.

Fuji Cutlery's REIGETSU series knives are made of Mo-V high carbon molybdenum-vanadium stainless steel. The handle is made of POM (polyoxymethylene), which provides excellent resistance to temperatures and water, as well as resistance to deformation. Considering the relatively small price of the knives, ergonomics and good steel hardness around 58 HRC - the Fuji Cutlery REIGETSU series of knives provides an excellent "price-quality" combination and is so popular among chefs and amateurs all over the world.
