PRO-M - knives made of single-layer carbon stainless steel with the addition of molybdenum, after hardening the steel is subjected to cryogenic tempering -70 °C for maximum improvement in strength. Made in Japan, at Seki Kanetsugu Co. Ltd factory, using manual processes and high precision CNC machines.
Convex grind on the right and flat on the left.
Traditionally thin cutting edge, with symmetrical sharpening — 50/50. The famous “convexity” refers only to the right descent, and not to the edge.
The handle is small, with ergonomic shape, made of high-strength wood-polymer composite. The resin impregnation under pressure, prevents swelling and prolongs the service life. It fits comfortably in the female hand, and is acceptable in a large male palm. Stabilized wood — is a warm material with excellent performance and durability. Bolster from 18-8 Stainless steel.
Details are perfectly adjusted, that demonstrates an exemplary production culture and compliance with hygiene requirements.
