Traditional Japanese kitchen knives from the Satake Yoshimitsu series are made of carbon steel SK-5 with a hardness of HRC-62. Thanks to it, the constant sharpness of the blade is maintained for a long time. The handle of these knives is octagonal in shape, made of traditional magnolia wood and reinforced with a plastic ring.
