Blade consist of 37 layers of metal (in Japan, this technology is called San-Mai). Where in the core is the heavy-duty Japanese steel VG10 (60-61 HRC), and both sides is softer steel (Low- and High-Carbon Stainless Steel). In result w have hard and flexible blade at the same time, that's why knives have long time cutting without sharpening. Tojiro Western DP knives also has high resistance to corrosion. The sharpening of the blade is symmetrical and very thin (~15^ both sides, overal 30^) , which makes it possible to cut products easily and quickly.
