Mizu 5000MCT Gyutoh - 20 cm is a chef's knife from the Japanese brand Miyabi. The knife has a blade length of 20 cm, which is the most common size and a much appreciated model thanks to its great versatility. Perfect for meat, fish and vegetables.
The knife is made with high-tech technology, MC63 steel (refined SG2 steel) has been micro-carbide powdered and CRYODUR® ice-hardened to an impressive 63 HCR. The result is exceptional hardness and durability. The blade has two layers of hammered stainless steel, Tsuchime, which gives a beautiful pattern and prevents the raw material from sticking during use. The knife blade is also sharpened with the traditional three-step Honbazuke method, which provides an ultra-sharp sharpness and a sharpening angle of 19°. The handle has a traditional Japanese D-handle that fits comfortably in the hand and is made of Micarta, a wood-like synthetic material. Lifetime warranty on materials and production defects.
