What is a Santoku knife for?
Santoku means “three advantages‶ in Japanese, so this knife cuts vegetables, meat and fish. Santoku is a Japanese chef's knife that looks a bit like a chopper. Santoku's center of gravity is moved forward, so less force is used when chopping. Santoku, unlike Nakiri, is much more versatile, as Nakiri is for vegetables, while Santoku, as mentioned, is also used to marinate meat and fish.

Water knife sharpener Minosharp
Global recommends using MinoSharp water-based knife sharpener for sharpening knives. This is a manual sharpener with ceramic discs that requires no experience or skill to use, just fill the sharpener reservoir with water and swipe the knife back and forth a few times. The sharpener has 2 ceramic discs with different grits, which ensure that the blade is sharpened correctly and at the right angle.
